Amish Velveeta

1 gallon milk

2 Tb citric acid

1 tsp baking soda

1/4 c butter

1 1/4 tsp salt

2 Tb cheddar cheese powder

1/2 c milk

Heat one gallon milk to 140degrees. Remove from heat and add citric acid. Stir gently until separated. Drain off whey, put through cheese cloth and let set 10 minutes

To these curds add 3/4 to 1 tsp of soda, butter, 1 1/4 tsp salt and cheese powder (more or less to suit your taste). Add the 1/2 c milk and heat together stirring briskly until all the lumps are dissolved. Butter a bread pan and put in the pan in fridge until cool.
