1 med cauliflower, steamed and mashed
1/2 c raw butter, salted,
1 T raw pistachios
1 cup raw cream
1/2 c aged cheddar cheese
sprinkle of Caerphilly cheese

melt the butter in a saucepan. Add the nuts and salt and pepper and garlic if you like. melt until fragrant. Add cream and whisk gently. Add in the cauliflower and stir until mixed and warm. Finally add the cheese and melt it all together, should be a thick soup. Place in bowls and sprinkle with the Caerphilly cheese. May also top with pork panko and bacon for keto, or panko (I always use gluten free. )
