
Bread is a natural to go with your cheese, so not make your bread WITH your cheese?
When I have extra cheese I always try to make something new out of it. My daughter is on the Keto diet, so I thought I would make a bread she could use. This dough can be made into empanada’s or moon pies (a meat pie).
1 3/4 cup Mozzarella cheese
5 tbs Butter (I love me some raw A2A2 butter!)
1 egg
1/2 cup Almond Flour
1/4 cup Coconut Flour
1 1/2 Tsp baking powder
1/2 Tsp salt
1/2 Tsp garlic powder
1/2 teaspoon onion powder
Preheat oven to 350.
All dry ingredients go into a big bowl, and the cheese, egg and butter are melted together over low heat. You don’t want to burn, just melt slowly. Add the melted cheese mix to the dry ingredients and blend thoroughly.
You want to keep the dough warm, I put half back in the sauce pan to keep warm and work with half at a time. Roll out on parchment paper to rectangle, about 1/2 to 1/4 inch thick depending on final use. For corndogs I would go half inch but all else 1/4 inch. Add a meat mixture, or a skinned pepper stuffed with moz, Smokey dogs etc. Now do the second roll of dough and then pop both in the preheated oven for approximately 20 minutes, check often to make sure it is not getting too brown.
