Whisk 10 eggs in a bowl. Add 10 ounces of sour cream and whisk again. Pour 3 gallons of milk into another bowl. Whisk in the egg mixture. Put over low heat. Stir down the skim. Bring to slow boil and add 2 cups of white vinegar.
Turn off heat and let rest 5 minutes. Strain through a cheese cloth. Drain completely. Strain by pushing down on the cheese cloth through a colander. Place weight on the cheese cloth and leave 30 minutes. Remove cheese cloth and place on board, It is ready to eat now.
